Vegan Potato Crab Cakes- Super Simple!
These potato "crab" cakes are so simple to make, made with sweet red onion, shredded king oyster mushrooms, garlic and herbs folded into fluffy mashed potato.
Makes 4 fishcakesIngredients:
- 3 medium potatoes
- a knob of vegan butter (about 25-30g, depending on your taste)
- a splash almond milk
- salt and pepper to taste
- 2 spring onions, finely chopped
- olive oil
- 1 red onion, finely sliced
- 2 large cloves garlic, minced
- 150g king oyster mushrooms, shredded
- 2 tsp balsamic vinegar
- 1 tsp lemon juice
- handful chopped coriander
- 100g golden breadcrumbs
Method:
- Peel the potatoes and chop into large chunks. Add to a pot of cold water and bring to a boil, and then simmer for 20 minutes (until fork-tender.)
- Drain the potatoes and add to a large bowl. Mash with the vegan butter, almond milk, salt and pepper, adjusting these ingredients until you have a fluffy, creamy consistency and taste. Fold in the chopped chives. Set aside.
- Heat the olive oil in a frying pan. Add the sliced onion and a pinch of salt and saute over medium high heat for about 5 minutes. Add the garlic and the shredded mushrooms and keep stirring, cooking for 10 minutes or so until the mushrooms are cooked through and beginning to crisp up.
- Deglaze the frying pan by adding the balsamic vinegar, using a wooden spoon to scrape bottom of the pan. Take off the heat and allow to cool for a few minutes.
- Fold the fried mushroom mixture into the mashed potatoes. Add a little lemon juice and the chopped coriander and mix everything together. Taste and adjust flavours.
- Pour the golden breadcrumbs onto a plate. Split the potato mixture into four equal sized balls and shape them into patties. Press these patties onto the breadcrumbs to coat each side and the edges.
- Heat a little oil in a large frying pan over medium-high heat and add the patties. Cook them for about 5 minutes on each side, until they are golden and cooked throughout.
- Serve with fresh ciabatta, vegan cashew sour cream, and any other garnishes of choice.
